WINERY & CELLAR In our vineyards, we cultivate 12 different grape varieties with a 95% white wine share and a 5% red wine share. We manage our vineyards in a conventional manner while taking great care to respect nature and wildlife. Quality and meticulous work are our top priorities, as well as those of our employees. Location & Soils. Our vineyards are primarily south-facing, providing our grapes with the best conditions for perfect sunlight exposure. Our vines are situated on the Labitschberg and Rosenberg slopes, where the warm, airy soil consists of deep sandy-loam deposits with tiny particles of weathered rock. This terroir allows our grapes to develop the perfect aroma for our wine. The production of wine is for us a metamorphosis of – vine, soil, sun, rain, and human effort. Winemaking requires great care. Grapes are hand-selected, berries are gently pressed, and the must is fermented slowly. It is important for us to bring the character of the variety, the uniqueness of the soil, and the vintage into the wine. The modernly equipped cellar creates the conditions for consistent quality of our wines, which mature in our steel tanks as well as in the 300-year-old vaulted cellar in wooden barrels, and are bottled at the peak of their quality.
