The regional market organized by Slow Food North Hesse will take place for the 18th time, featuring around 40 stalls from farmers, butchers, bakers, cheesemakers, and other producers of good food from North Hesse. Only those who can meet the quality criteria set by Slow Food for good, clean, and fair food production are allowed to participate. In advance, ingredient lists for all products must be submitted, which will be checked for compliance with the standards by Andrea Berg-Busch and Jakob Hinkel: Only products made without flavor enhancers and unnecessary additives and aids are permitted. Therefore, there will be no jam with ascorbic acid, no bread made from baking mixes, and no Ahle Wurscht produced with starter cultures and ripening accelerators at the market.
