Fermentation is not only the oldest process used by humans for food processing and preservation, but it is also a ubiquitous process that shapes cultures, transforms the planet, sustains us, and all of this with minimal energy expenditure. With fermented vegetables, we can preserve or rescue surpluses, create new favorite dishes, and simultaneously have a positive impact on our health. A simple jar of sauerkraut contains more potential to improve the world than we can imagine.
