A seminar about the creation and production of sparkling apple wines made from Swabian orchard fruit. We will show you what to consider when choosing varieties and extracting juice, and share our experiences regarding yeast selection and fermentation management. We will demonstrate different ways to turn your must into a sparkling experience and clearly explain what materials you will need for this. Together, we will practice sensory error detection, taste exciting products together, and take time for your questions. Martin Häfele is a trained winemaker and oenologist and works as a lecturer in beverage technology at the University of Applied Sciences in Wädenswil, Switzerland. Whether it’s wine, beer, cider, or kombucha, his passion particularly lies in fermented beverages. Together with Michael Gugelfuß, he has been co-responsible for extraordinary cider creations as AlbApfel GbR for 5 years. Important: This offering is an advanced seminar, meaning you must have good knowledge of fruit wine production. You can acquire this knowledge, if necessary, in our 1-day seminar "Fundamentals of Fruit Wine Production" on September 5, 2026.
