A seminar on the creation and production of sparkling ciders from Swabian orchard fruit. Ciders from Swabian orchard fruit. We will show you what to look for when selecting varieties and extracting juice, and share our experiences with yeast selection and fermentation control. We will show you different ways to turn your must into a sparkling experience and clearly explain what materials you need to do so. Together, we will practice sensory fault detection, taste exciting products, and take time to answer your questions. Martin Häfele is a trained winemaker and oenologist and works as a lecturer in beverage technology at the University of Applied Sciences in Wädenswil, Switzerland. Whether wine, beer, cider, or kombucha, his passion lies particularly in fermented beverages. Together with Michael Gugelfuß, he has been jointly responsible for extraordinary cider creations for five years as AlbApfel GbR.  **Important:** This is an **advanced seminar**, which means you must have a good knowledge of fruit wine production.
