Fermentation is not just fermentation – it's the yeast that makes the difference! In the processing of orchard fruits into juice, cider, or spirits, the fermentation process plays a central role. It is worthwhile to take a detailed look at different yeasts and their fermentation processes, as well as the resulting sensory outcomes. Magdalena Müller is a research associate at the Institute of Food Science and Biotechnology, Department of Yeast Genetics and Fermentation Technology at the University of Hohenheim.
