POSTSTUBE 1327 x THERESIA PALMETZHOFER (Inn at the Palm)

Theresia Palmetzhofer is among the best female chefs in Austria. Awarded four toques, listed among the 100 best chefs in the country, and honored as Female Chef of the Year by Rolling Pin in 2023, she represents a cuisine that takes classic cooking seriously while also evolving it.

Her cooking is rooted in traditional craftsmanship learned from her mother. Her style has also been shaped by international experiences in renowned kitchens in Vienna, Copenhagen, and San Sebastián. Today, she brings this experience to her inn, Gasthaus zur Palme, in the Mostviertel region.

In the Poststube 1327, she demonstrates what contemporary upscale tavern cuisine can sound like: deeply rooted in regional ingredients from the Mostviertel and its surroundings, precisely executed with classic techniques, without dogmas – but with a clear, confident signature. Regional products are not only utilized but elevated to a new level through creative ideas and careful execution.

Her cuisine is regionally inspired but not limited. Because enjoyment knows no boundaries, subtle international influences flow into her choices of texture, spices, and techniques. As she herself says, she cooks "dishes that she enjoys eating" – clear, honest, and full of character.
