The Q-signature, inspired by an old Mühlviertel cooking method, has led to the rediscovery of the pine fish in Q Windischgarsten. For this dish, the freshest salmon trout from the region are used – sourced directly from the "Pießling Spring" by fish dealer Werner Mühle. The salmon trout fillets are gently smoked in a handmade pine box, giving the fish a delicate pine note. This is served with chive cream potatoes and braised romaine lettuce, refined with horseradish and pumpkin seed oil.
