Christine Brugger, a sensory scientist, author, and lecturer, shares her extensive knowledge from the world of sensory analysis and flavors in this intensive one-day seminar. The course is aimed at producers and direct marketers of juice, must, and cider. Participants will be sensitized to the sensory aspects of apples and will learn entertainingly and with plenty of practical experience about basic sensory knowledge, the occurrence of flavors in pome fruits, as well as the development of a specific vocabulary, recognizing off-flavors, and how to avoid them. We will also learn how to optimize products and how to structure and moderate tastings. Participants are encouraged to bring their own juices and musts - including those with off-flavors. Look forward to an entertaining and hands-on day with Christine Brugger. Own products (juice, must, cider) can be submitted in advance (at least 14 days before the event) to be tasted and evaluated together during the course.
