The introductory seminar is aimed at those interested in orchard fruits, owners of meadows, and cider drinkers who would like to press their own fruit wine or have already attempted it. The seminar provides basic knowledge for the successful production of fruit wine and is designed for beginners with little or no prior knowledge. Topics include the processing process from fruit to fruit wine, alcoholic fermentation, stabilization and storage, as well as sensory analysis and taste. Small practical exercises, as well as material knowledge and sources of supply, are also key focus areas. The speaker, August Kottmann, is a restaurateur, distiller, pomologist, and long-time cider maker from Bad Diotzenbach, where he operates the Gasthof Hirsch with his family in the third generation.
